Am I wrong for being uncomfortable with the phrase: ...ftms are always so delectable. >,>;; ?

I am not FtM, I cannot speak for a group I am not in. But the fetishization of a group makes me so uncomfortable. It is not saying you like an aspect of the group (in this case, androgyny), which is fine; people have preferences, etc. But saying a group is 'delectable' is reducing them to nothing more than a sexual object.

Perhaps I am being over-sensitive on this. It is a group I am not a part of, it is not my place to speak to them.

I think I am alienating myself from a group of friends with this. And with taking issue with someone demanding to see the eye socket of someone missing an eye.

I feel like I am setting myself up for a fall here.

For what it's worth, as a FtM, I'd find that kind of fetishization creepy if it was, um... specific? I guess? I think there's a difference in saying that one finds FtM people sexy in general, and going to a FtM person and trying to bed them ONLY because they are FtM.

That said, I am quite known for Missing The Point, and if something doesn't feel right to you, no one has the right to invalidate your feelings about it. If you find it offensive or disturbing, you're entirely in the right to those feelings.

Perhaps it's just me, but I feel the same way about any person aspect-centered sexualization. Be it female/male, hair color, weight, it sometimes bothers me. (Though at the risk of being hypocritical, I'm pretty okay with people going for clothes or things not part of a person's actual being.)

But maybe the person who said the first quote merely meant they find FtM to their liking. Most of us seem kind of bad with wording, so it's possible? I dunno.

Actually, no, you are not in the wrong for feeling uncomfortable for that. That sort of fetishization is very uncomfortable because it erases the person in favor of the ~hotness~. I don't know anyone who is an FTM (or MTF for that matter) who's very comfortable with that either.
